Per Pubs and sandwich shops

Your crowd changes three times a day.

Quick lunch, long aperitivo, late-night drinks. Three menus inside the same kitchen, with a single cook.

The agent's point of view

A pub is not one hour of the day, it is three. At midday it needs a quick lunch that doesn't taste of the warehouse. At 19:00 it needs an aperitivo that sells the second round. At 23:00 it needs a signature sandwich that settles the stomach of someone who has been drinking. Three menus, one kitchen, the same cook. That is what we think about when we do our buying.

The three pressure points we see every time we walk into a kitchen

What complicates your day.

01

Three menus inside one kitchen

The same staff has to cover lunch, aperitivo and late night. A gear change every 4 hours, with no technical gaps between one service and the next.

02

The aperitivo counter decides your takings

Three quarters of the margin is made between 19:00 and 21:00. If the aperitivo is poor or repetitive, the evening dies before 22:00.

03

The late-night crowd is a different customer

Whoever walks in at 23:00 has been drinking. They don't want cold pizza, they want a sandwich that works as a full plate. And they want it in 6 minutes.

The four exclusive Speedy Food solutions that make sense here

What we give you.

Salento exclusive · ready meals

Ready meals for the quick lunch.

No kitchen shift at 12:00, yes to a gourmet dish of the day at 12:30. The same fryer that will serve the aperitivo also covers lunch.

Sistema Gusto
Salento exclusive · Pizzella System

The aperitivo that keeps the counter turning.

Pizza ready in three minutes and portioned, served alongside a glass. 230 g for the aperitivo, 350 g when it becomes dinner. Three hours between 7 and 9 pm that are worth the rest of the day.

Pizzella System
When working together makes sense

Four moments when it makes sense.

Quick lunch · 12:30-14:30

Covers that turn over in thirty-five minutes, a modest but steady receipt. Ready meals cover the shift without tying up the kitchen you need tonight. Whoever has lunch here during the week is the one who brings friends on Thursday for the aperitivo.

Long aperitivo · 18:30-21:00

This is where the pub makes its margin: portioned Pizzella, a board, beer. Three hours that are worth the rest of the day, and the table that sits down now is the one that orders again at eleven instead of getting up.

Late night · 22:30-00:30

This is where Salomon comes in: a signature sandwich, no pizza and no cold dishes. It is fried to order, so you are not opening a second prep at the end of service. It is the hour that decides whether Saturday is full or half empty.

Saturday night · 20:00-02:00

All three slots inside the same six hours, with one kitchen. Stock decided on Thursday, restocking mid-evening, the same fryer that did lunch. Whoever leaves happy at two comes back for lunch on Monday, and that is where the loop starts again.

A pub in the centre · Lecce

Three menus in one kitchen with no new hires. Speedy Food made us see that the same fryer could serve lunch and the after-dinner, and we gained two staff hours a day.

Let's build the three menus around your kitchen.

An agent spends a week with you across lunch, aperitivo and late night. By the end of it you have three menus, three shopping lists, and a margin for each moment. You start the day after.
